Lamb Curry Mutton Paya (Rayalaseem Pottelu Kalla Kura)

Mutton paya or kalla kura is an exotic curry from rayalaseema made with lamb legs. It is served with idli or ragi sangati. This soup is really good for health, as it is cooked to the point where all the healthy vitamins and minerals are absorbed into the soup. Ingredients


To pressure cook:

  • 8 pieces Lamb Paya,
  • 2 table spoon Oil,
  • 1/4 table spoon of Turmeric powder,
  • 2 table spoon of Ginger&Garlic paste,
  • 2 table spoon of Coriander powder,
  • 2 table spoon of Chilli powder,
  • 1 medium Tomato,
  • Salt.

For masala paste:

  • 1 medium Onion,
  • 1/2 cup freshly Grated coconut,
  • 4 Cloves,
  • 1 Green cardamom,
  • 1''Cinnamon stick.

For Gravy:

  • 2 table spoon of Oil,
  • 1 medium Onion,
  • 4 Cloves,
  • 1 Green cardamom,
  • 1''Cinnamon stick,
  • 4 green chillies,
  • Few curry leaves,
  • Salt to taste.


Method of Preparation:

  • First you can take cleaned and burned lamb paya. (Burned Paya gives good taste for curry)
  • Next clean Lam legs / Paya with pinch of turmeric very throughly for atleast 2-3 times
  • In a pressure cooker, add all the cleaned paya along with oil, salt, turmeric powder, coriander powder, chilli powder, ginger & garlic paste and tomato. Add up to 1.5 liters of water and pressure cook atleast 30 whistles over high flame.(It will take atleast 40 minutes). After it is cooked switch of stove.
  • Heat oil in a heavy bottom sauce pan. Add cinnamon stick, cardamom, cloves. Then add chopped onions till it will turns translucent. Now add green chillies and curry leaves.
  • Now add grounded masala paste and fry mixing well until oil leaves the sides of the pan.
  • Now you can add the paya then adjust salt and chilli powder close with lid.
  • Simmer gently for a further hour.Make sure to stir often or so just so it doesn't stick to the bottom. Now you can adjust the thickness of the gravy.
  • Finally remove from the fire and serve with Idli (or) Ragi sangati.
